Steak Tacos with Smoked Tomatillo Salsa

What is the difference between a taco and a fajita? Is there really a difference? Greg said the thing that sets a fajita apart from a taco is the addition of peppers and onions, and a Google search said that fajitas are typically made with grilled skirt steak, peppers, and onions. I used peppers and onions, but no grilling was involved. I do not know if this recipe is for tacos or fajitas (I am going to call them tacos, though), but I do know that it was a delicious meal. The tomatillo salsa was so good, and I recommend the (small) extra effort of making it rather than buying jarred salsa. It is smoky and flavorful, and it has just the right amount of kick to it. Steak Tacos with Smoked Tomatillo Salsa

INGREDIENTS:
 3 tomatillos, husks removed and cut into halves
2 cloves garlic, peeled
1/2 small jalapeno pepper, seeds removed and sliced in 1/4" slices
1 7-ounce can chipotle pepper in Adobo sauce, divided
1 small green bell, sliced
1 small yellow bell, sliced
1 small red bell, sliced
1/2 small red onion, sliced
3 Tbsp. of Olive oil, divided
salt and pepper
pinch of sugar
3/4 pound flank steak 
Flour tortillas, soft taco size
Greek yogurt or sour cream (optional) 
Sliced avocado (optional)
1/2 lime (optional)

DIRECTIONS:
Make the tomatillo salsa first. Put a nonstick skillet over medium-high heat.  Place the tomatillos, skin side down, in the skillet, and add in the garlic and jalapeno pepper. Let it cook for about 7 minutes, or until the tomatillos are softened completely through. Then remove from heat and sprinkle with salt and pepper. Transfer contents of skillet to the bowl of a food processor. Add in 1 of the chipotle peppers from the can and 1 Tbsp. of water. Pulse until a salsa is formed. Put in a bowl and set aside. Add the remaining contents of the chipotle peppers to the food processor. Pulse until smooth. Put the steak on a large plate and brush all sides of the meat with a thin layer of the chipotle sauce. Let sit until ready to use.

Preheat oven to 200 degrees. Arrange the tortillas on a baking sheet and brush each side lightly with olive oil and sprinkle one side with a touch of sea salt. 

In a large, nonstick pan, heat 2 Tbsp. of olive oil over medium high heat. Add in the peppers and onions, a dash of salt and the 1/8 tsp. of sugar. Cook, stirring frequently, until peppers and onions are cooked through. Transfer to a bowl or plate and cover with foil. Wipe pan out and place back over medium high heat with the last tablespoon of olive oil.

Place the tortillas in the oven.

Add the meat to the skillet. For medium, cook on one side for 4 - 5 minutes, then flip and cook for an additional 4 - 5 minutes. Remove meat and place on a cutting board. Let sit 5 minutes before cutting. If you want a little more kick in the meat, once it is cut, place back in skillet and set over low heat with a little extra sauce for about 1 minute. 

Assemble your tacos. Remove warm tortillas from the oven. Place about 1.5 - 2 ounces of steak, peppers, onions, smoky tomatillo salsa, Greek yogurt, avocado, and a squeeze of lime into each and serve!

Coconut-Encrusted Fish Tacos with Mango, Avocado Crema, and Sweet Chipotle Sauce

I decided that this is going to be the summer of tacos! I searched the web for some super tasty taco recipes, and I also have been dreaming up a few recipes myself. I am kicking off the start of taco recipes with these delicious coconut-encrusted fish tacos with mango, avocado crema, and sweet chipotle sauce. They are amazing! I am planning on including vegetarian tacos, crab tacos, chicken tacos, pork tacos, grilled scallop tacos, shrimp tacos, and so much more over the next couple of months I hope you are as excited about these taco recipes as I am. Enjoy!

*This summer I am also hoping to make many recipes with tomatoes and squash from our garden, as long as they do well this season. Last season our zucchini crop did not produce. I want to make lots of recipes from this list. And, of course, I will be making plenty of yummy desserts this summer!

Recipe for Coconut-Encrusted Fish Tacos with Mango, Avocado Crema, and Sweet Chipotle Sauce

INGREDIENTS:
4 (4 ounce) frozen filets of flaky white fish (such as Alaskan Flounder), thawed
2/3 cup of flour
2/3 cup of Panko bread crumbs
1 1/4 cup of shredded sweet coconut (such as Bakers brand)
1/4 tsp. of smoked sweet paprika
1/8 tsp. of salt
Honey
Sea salt
Olive oil
Avocado Crema
2 large Hass avocados
Pinch of sea salt 
3 Tbsp. of full fat Greek yogurt
Juice of one lime
1/2 tsp. of pure maple syrup
Sweet Chipotle Sauce
One chipotle pepper from can, minced very finely
1 tsp. of chipotle pepper sauce from can
1 tsp. of honey
1/3 cup of full fat Greek yogurt
Mango
2 mangoes, diced into 1/4-inch cubes
Juice of one lime
Pinch or two of sea salt
Assembling
Shredded carrots or cabbage
4 - 6 soft taco size flour tortillas

DIRECTIONS:
In a shallow dish, stir together the flour, Panko bread crumbs, coconut, smoked paprika, and salt. Pat thawed fish fillets dry with a paper towel. Drizzle a little of honey over one side of the fish,  use your hands or a spoon to make sure honey is rubbed in, and then sprinkle with some sea salt. Flip, and repeat on the other side. Then dredge the fish fillets into the coconut mixture, coating each side. Place the coated fish on a plate or pan and set in the fridge for 30 to 45 minutes. Chop up the mangoes and place in a bowl. Squeeze juice of one lime over the chopped mango and sprinkle with sea salt. Place in container, cover, and put in fridge until ready to use.

Heat 1 Tbsp. of olive oil in a large non-stick saute pan over medium-high heat. Once oil is hot, add in 2 of the fish fillets (more if there is room in your pan, without overcrowding) in the pan, and cook for 2 - 3 minutes. Then flip, and cook for an additional 2 - 3 minutes, or until coconut is browned, but not burnt, and fish is cooked through and flaky. Remove fish from the pan. Place fish on a baking pan and keep warm in oven at 200 degrees while you cook up the remaining two fillets of fish. Before cooking the rest of the fish, wipe the pan clean with a paper towel and add another tablespoon of olive oil to the pan. Once all fish is cooked, transfer to a plate, drizzle with a little honey, sprinkle with sea salt, and cut up.

While the fish is cooking, make the avocado crema sauce and sweet chipotle sauce. For the avocado crema sauce, pit the avocados and remove the skin. Put the fruit of avocado into a bowl. Add the juice of one lime, pinch of sea salt, Greek yogurt, and pure maple syrup. Use a fork to stir well until completely smooth.

For the sweet chipotle sauce, add Greek yogurt, minced chipotle pepper, chipotle sauce, and honey to a bowl and mix well.

To assemble, warm tortillas by wrapping in paper towel and heating in microwave for about 30 seconds. Put cut up fish in tortilla, top with avocado crema, mangoes, sweet chipotle sauce, and carrots. Enjoy!

Creamy Sweet Potato and Bean Taquitos (Vegetarian)

Outside my house right now the East coast blizzard of 2016 is underway. This storm has had a lot of hype building up to it, and usually when a storm is hyped up, it fizzles out and it never amounts to what we have been told. The forecast has not been downgraded at all, and I am a bit terrified of this snowstorm! My biggest fear is that our power will go out. If our power goes out, we will have no heat and no running water. To prepare for the possibility of the power going out, my main thing has been making sure that we have lots of food to eat over the weekend. One of my friends told me the other night that her biggest nightmare would be sitting in the dark eating beans out of can with a spoon, and I had to giggle. But then I thought about it some more, and I realized that I really don't want to be eating beans out of a can either this weekend, so I started cooking up a storm! Last night I made these creamy sweet potato and black bean taquitos. I made them for the first time earlier this week and we loved them. If you leave out the chicken broth for the beans and substitute vegetable broth, it is a vegetarian meal. These creamy sweet potato and bean taquitos are made with roasted chopped sweet potato, a spicy bean mixture, and lots of cheese. You can serve them with sour cream and avocado for dipping, or you can just eat them plain. I think they would be a great snack at gatherings (Superbowl party, maybe), and they also make a great lunch or dinner.

Today I made a huge amount of Mexican slow cooker chicken, corn pudding, and hot chocolate. I am excited to have this time this weekend to spend with Greg and Wendy, to catch up on some reading, and to eat delicious food. East coasters, stay warm, stay safe, eat well, and enjoy the beautiful snow!

Recipe for Creamy Sweet Potato and Bean Taquitos

INGREDIENTS:
2 medium-sized sweet potatoes, peeled and chopped into 1/2-inch cubes
1 Tbsp. of extra virgin olive oil, plus extra for brushing the tortillas
Salt and pepper
1 cup of beans from spicy bean burritos (omit the Chipotle peppers in adobo sauce and salsa from the recipe)
3 ounces of cream cheese, softened at room temperature
1 cup of grated cheese (I used Monterey Jack)
2 Tbsp. of your favorite salsa (I used Kirkland organic salsa)
10 Taco size soft flour tortillas
Coarse sea salt


DIRECTIONS:
Preheat the oven to 400 degrees. Put the chopped potatoes, olive oil, salt, and pepper into a bowl and toss well. Pour the sweet potatoes onto a baking pan and place in heated oven. Cook for about 25 - 30 minutes, stirring occasionally. Remove from oven and allow to cool. Leave the oven on.

While the potatoes are cooking, start the bean mixture. You will have beans leftover to use for burritos, because you will only need 1 cup for the taquitos. Remember to omit the following ingredients from the recipe: Chipotle peppers in Adobo sauce, salsa. Use vegetable broth in place of chicken broth if you are choosing to make this a vegetarian meal. Make sure to cook the beans until moisture has absorbed and then stir and mash to desired consistency.

Use your hands or use a fork to mash the potatoes up into a mound. Put the potato mash, 1 cup of the beans, cream cheese, salsa, and cheese into the bowl and use a fork to mix well.

Zap the tortillas in the microwave for about 30 seconds to make them easier to roll. Then scoop the sweet potato and bean mixture down the middle of each tortilla and roll tightly. Arrange each one next to the other on a baking sheet. Lightly brush olive oil over the top of each tortilla and sprinkle each with a pinch of sea salt. Place in the oven and cook for 8 - 10 minutes, watching carefully so they do not burn around the edges. Remove from oven and serve with your favorite taquito dipping sides!

Chicken Enchilada Soup

A few weeks ago, I came across the recipe for this soup on Facebook. One of my friend's family members had posted the recipe to her page, and it intrigued me. I looked over the ingredients and at first did not think that the soup was something that I would want to try. I had remembered my friend saying that she had tried the recipe and that her family loved it, so I went back and looked at the recipe again because I usually like the meals that she suggests. After reading the second time, I realized that the vegetable ingredients are pureed, and that the chicken and beans are then added in to the pureed mixture. I tried to imagine how it might taste and decided I wanted to give it a go, especially because it sounded like a healthy recipe. I'm so glad I tried it! I made the recipe last Saturday. I was shocked by how easy it was to make. The soup was thoroughly enjoyed by me, Greg, Wendy, and my parents. Even my father liked the soup, which was surprising, because it has onion and red pepper (he usually refuses anything with those two ingredients). The recipe makes a TON of soup, so we ate leftovers all week and nobody complained. Wendy really likes the soup too, which is great, because it is full of vegetables and protein. I served the soup with corn pudding (tomalito), avocado, Greek yogurt, Goya-brand pico de gallo, queso fresco cheese, and crispy tortillas. I know I will definitely be making this soup again very soon. I am super appreciative to my friend's sister for posting this amazing recipe on Facebook! I hope you enjoy this meal as much as we did.

Recipe for Chicken Enchilada Soup

INGREDIENTS:
8 ounces of chicken or vegetable broth
1 1/2 pounds of boneless skinless chicken breasts
4 medium Russet potatoes, peeled and chopped
1 medium sweet potato, peeled and chopped
1 medium yellow onion, quartered
3 cloves of garlic, chopped in half
1 small red bell pepper, with seeds and removed, chopped
4 cups of butternut squash, cubed (time saving tip - buy it from the store already chopped for you)
1 can of diced green chiles
3 cans of great northern beans
8 ounces of tomato sauce
1 cup of full-fat Greek yogurt or sour cream
1/4 cup of your favorite taco seasoning
Toppings/Sides
Sliced avocado
Queso fresco cheese
Salsa/Pico de Gallo
Drizzle of olive oil
Full-fat Greek yogurt/Sour Cream
Baked tortillas (brush each side of a small flour tortilla with olive oil, sprinkle on salt on each side, bake at 375 in oven for about 4 minutes per side or until done to desired crispiness)
Corn pudding - can be served on the side or served as a topping

DIRECTIONS:
Put the broth, chicken breasts, russet potato, sweet potato, yellow onion, garlic, red bell pepper, butternut squash, diced green chiles in a large pot and bring to a boil over high heat. Once it comes to a full boil, reduce heat to medium and simmer, covered, for about 20 minutes, or until the chicken is cooked through. Use a slotted spoon to remove the chicken from the broth and set on a plate to cool. Turn the heat to the stove top off. Ladle soup about 2/3 full into a blender and puree each batch until smooth. Pour the pureed mixture into a large bowl. Once all of the soup from the pot is pureed, pour back into the pot. Stir in the Greek yogurt (or sour cream), tomato sauce, beans, and taco seasoning. Then use a fork to shred the chicken into smallish pieces. Add the chicken into the pot and stir. Put pot over stove top again and set on medium-low heat to warm through. Ladle soup into bowls and serve with desired toppings.

Vegetarian Tamale and Cheese Pie

Over the past few months, I have been following a pretty low carb diet. Did you know that carbs are in pretty much everything under the sun except for meat, eggs, and cheese? I have definitely been feeling like I have been eating way too much meat lately. I have slowly been reintroducing carbs back into my diet, and I have been trying to find recipes that are healthy and satisfying. I have been uninspired by so many recipes that I come across, but I was so excited when I saw this recipe on a blog that I follow the other day. I knew immediately that I had to try it out. Greg was away for two weeks at a work training in Pennsylvania, so I made this dish for him when he got home last Saturday. We had our neighbor over, and we sat out on the front deck enjoying the chillier fall weather and the soulfulness of this dish. This recipe does require a bit of time, but none of the steps are difficult. After making it, you won't have to cook again for several days. We ate it every day between Saturday and Wednesday and never got tired of it! Our daughter, who is 1 1/2 and getting more picky about food, also enjoyed this meal. I think you will probably enjoy this meal, too! It is healthy, hearty, comforting, and filling! Yum!

Recipe for Vegetarian Tamale and Cheese Pie

INGREDIENTS:
3 14.5-ounce cans of diced tomatoes, with liquid reserved
1 medium yellow onion, chopped
4 cloves of garlic, chopped
1 Tbsp. of extra virgin olive oil
1 1/4 tsp. of kosher salt, divided
1 Tbsp. of chipotle peppers in adobo, chopped (add more if you want more heat)
2 tsp. of chili powder
1 Tbsp. of freshly squeezed lime juice
2 15-ounce cans of black beans, drained
2 15-ounce cans of pinto beans, drained
1 1/2 cups of frozen corn
2 Tbsp. of fresh cilantro, finely chopped
1/2 tsp. of dried oregano
12 ounces of grated cheese (you can use colby jack, mild cheddar, sharp cheddar, pepper jack - or a blend of cheeses)
5 1/2 cups of water
1 3/4 cups of cornmeal
Salt & pepper

For serving:
Sour cream or Greek yogurt
Chopped avocado
Tortilla chips

DIRECTIONS:
Preheat the oven to 425 degrees. In a medium sized bowl, combine the diced tomato, chopped onion, garlic, olive oil, and 1/2 tsp. of the kosher salt. Mix together. Line a rimmed baking sheet with foil and then pour the tomato mixture onto the baking sheet. Place in oven and roast, stirring a couple times, until the garlic and onion begin to brown on the edges (about 30 minutes or so).

While the vegetables are roasting, pour the reserved tomato liquid into a blender. Add in the chipotle peppers, chili powder, and lime juice. Then when the vegetables are finished roasting, transfer them into the blender with everything else. Puree the mixture until it is slightly chunky, about 10 - 15 seconds. Set aside. Lower the oven temperature to 375 degrees.

Put the beans, corn, cilantro, and oregano into a 9x13 inch baking dish. Pour the sauce from the blender on top and mix well. Spread the mixture into an even layer, and then sprinkle the cheese evenly over the top.

Get a whisk ready. Put the water into a large saucepan, set over high heat, and bring to a boil. Add in the 3/4 tsp. of kosher salt. Slowly add in the cornmeal, using the whisk to whisk vigorously so the cornmeal does not clump. Then reduce the heat to medium-high and continue to cook, while whisking constantly, until the cornmeal softens and the mixture thickens (about 3 - 4 minutes).

Remove the cornmeal mixture from the heat and season with salt and pepper, to taste. Use a spatula to spread the warm cornmeal evenly over the top of the casserole. Make sure to spread the cornmeal to the edges of the baking dish.

Cover the dish with foil and bake for 30 minutes. After 30 minutes, remove the foil and cook for another 30 minutes. Allow it to cool for 5 - 10 minutes before serving.

Serve each piece with sour cream (or Greek yogurt), avocado slices, and tortilla chips.

Slow Cooker Chicken Tortilla Soup

I like things in my life to be fairly simple. That is why this slow cooker chicken tortilla soup recipe is a winner in my book. The soup itself requires barely any prep time at all. If you want to really save time with this recipe, you can opt out of doing the tortilla crisps, and just use store-bought tortilla chips instead. I think the tortilla crisps add a nice touch, though. Greg and I enjoyed the chicken tortilla soup for lunch and dinner last week. We topped it with avocado, sour cream, white cheddar cheese, and the tortilla strips. I found that the soup actually tasted even better after being in the fridge for about a day, since it gave a chance for the flavors to meld together even more. I will definitely be making this soup many times this fall and winter! I hope you will give it a try, too. Enjoy!

Recipe for Slow Cooker Chicken Tortilla Soup

INGREDIENTS:
For the soup
5 cups of chicken broth
1 (29-ounce) can of diced tomatoes
1/2 cup of diced yellow onion
4 cloves of garlic, pressed (or 1 tsp. of garlic powder)
2 tsp. of cumin powder
1 Tbsp. of chili powder
1 tsp. of paprika
1/2 tsp. of ground coriander
A pinch or two of salt
Freshly ground black pepper
2 1/2 pounds of boneless skinless chicken breasts
2 (14.5-ounce) cans of  black beans
2 cups of frozen corn
2 Tbsp. of freshly squeezed lime juice
1/4 cup of fresh cilantro leaves, torn (buy U.S. grown)

For the tortilla strips
4 8-inch flour tortillas
2 Tbsp. of vegetable oil
1/2 tsp. of ground cumin
1/4 tsp. of cayenne pepper
Salt

For topping
Chopped avocado
Grated cheese (we used sharp cheddar)
Sour cream (or full-fat Greek yogurt)
A few cilantro leaves

DIRECTIONS:
For the soup
Put the chicken broth, tomatoes, onion, garlic, and spices into the bowl of a slow cooker. Add the salt and pepper. Drop the chicken into the mixture, cover with the slow cooker lid, and cook on low heat for 6 hours (or until chicken is cooked and shreds easily with a fork).
Use a slotted spoon to remove the chicken from the slow cooker and transfer to a plate. Use a fork to shred the chicken into smallish pieces. Then add the chicken back to the slow cooker and stir in the beans, corn, lime juice, and cilantro. Cook for an additional 10 - 15 minutes. While it finishes cooking, make the tortilla strips.

Once tortilla strips are finished, ladle the soup into bowls and top with grated cheese, sour cream (or full-fat Greek yogurt), chopped avocado, and tortilla strips.

*If you make the soup later in the day like I did, ladle the soup into airtight containers and store in the fridge. Reheat in a pan over medium-low heat on the stove top. I actually found that the soup got even better leftover because the flavors melded together more in the fridge! 

For the tortilla strips
Preheat the oven to 375 degrees. Lightly oil a baking sheet with Misto or Pam.  In a small bowl, stir the oil and spices together. Brush each side of a tortilla lightly with the oil mixture (about 1/2 tsp.per side - you will not use all of the mixture). Then stack the flour tortillas together on a cutting board and cut into desired sized strips.. Put the strips in a single layer on the prepared baking sheet and sprinkle salt over top. Place in oven and cook until crispy, about 10 - 15 minutes. Let cool on the baking sheet until ready to use. Any leftovers can be stored in an airtight container at room temperature for a few days.

Slow Cooker Barbacoa Beef

Who likes Barbacoa? I thought that Barbacoa was something I could only order when out to eat at places like Chipotle, but now I know I can make it at home, too! I have really had to change the way I eat since I started eating a more low carb diet, so the truth is, I do not have much experience with preparing and cooking meat. I actually had never even bought chuck roast before I made this recipe! I could not believe how easy it was to cook this barbacoa beef.  The prep time for the meal was less than 5 minutes, and then I just let my slow cooker do its magic. The meat was cooked in the slow cooker until tender, and it shredded beautifully. The meat is incredibly flavorful, thanks to the spice mixture that is rubbed on it prior to it going into the slow cooker. Greg and I ate the barbacoa in a salad four nights in a row. Greg said there are some meals he gets tired of if he has to eat them too much, but he said he was still loving this meal on the fourth night. I made the barbacoa salad with romaine lettuce, rice, beans (kidney or black), corn, tomato, avocado, Colby jack cheese, sour cream, salsa, and bacon habanero tortilla chips. You can prepare it however you like, though. Use it in tacos, burritos, salads, or just eat it over rice with vegetables. Enjoy!

Recipe for Slow Cooker Barbacoa Beef 

INGREDIENTS:
1 medium yellow onion, chopped
1 tsp. of garlic powder
1 Tbsp. of oregano
1 1/2 Tbsp. of cumin
1/2 tsp. of ground cloves
2 tsp. of salt
3/4 tsp. of black pepper
2 1/2 pounds of chuck roast
3/4 cup of beef broth
1/4 cup of freshly squeezed lime juice (about 2 large limes)
2 1/2 Tbsp. of apple cider vinegar
3 bay leaves

DIRECTIONS: 
Put the chopped onion into a slow cooker. In a small bowl, mix together the garlic powder, oregano, cumin, ground cloves, salt, and pepper. Spoon some of the mixture over the meat and rub over the surface of the meat using the spoon. Continue until the surface of the meat is coated with the spice mixture. Put the meat in the slow cooker with the onion, and include any of the spice mixture that may have fallen off. Then add in the beef broth, lime juice, apple cider vinegar, and bay leaves. Cook on low for 8 to 10 hours (I cooked it for 8 1/2 on low) or you can cook it on high for 4 - 6 hours.

Once meat finishes cooking, transfer it to a large plate and shred. Get rid of the fatty pieces of meat. Discard the bay leaves from the slow cooker. Add the meat back to the slow cooker and let it soak in the liquid for about 10 minutes before serving.

Store any leftover meat in the fridge in airtight containers and consume within 4 days.

Simple White Fish Tacos

I am not sure why, but I have always thought that making fish tacos wouldn't be easy. Boy, have I been so wrong! This is one of the simplest meals to throw together, and it takes only 30 minutes from start to finish. I love the combination of the lime and cilantro in this recipe. We topped our fish tacos with mango, avocado, cabbage, mild cheddar cheese, and Panko bread crumbs I think these tacos would also be really good with some jicama. You can add whatever you want to your fish tacos, as long as you promise to top them with the creamy cilantro sauce. Oh, and the Panko bread crumbs really do add a nice crunch to the tacos, so you might want to consider those too. This is a great recipe for summer because it is so light, healthy, refreshing, and easy. Enjoy!

Recipe for Simple White Fish Tacos

INGREDIENTS:
For the fish
8 ounces of white fish (I used tilapia)
1 Tbsp. of fresh lime juice
2 Tbsp. of extra virgin olive oil, divided
1 1/2 Tbsp. of cilantro leaves, torn
1/8 tsp. of cumin powder
1 clove of garlic, pressed
Salt and pepper

For the creamy cilantro sauce
Juice from 1/2 lime
1 Tbsp. of cilantro leaves, minced
1/4 cup of Greek yogurt (or sour cream)
1 clove of garlic, pressed
A pinch or two of ground cayenne pepper (optional)
Freshly ground black pepper

For serving
6-inch flour tortillas
Chopped mango (from 1 medium mango)
Chopped avocado (from 1 medium Hass avocado)
Shredded green cabbage
Finely grated mild cheddar cheese
Cilantro leaves
Panko bread crumbs (gives it a nice crunch)!
Or, whatever you want

DIRECTIONS:
In a shallow dish, stir together the fresh lime juice, 1 tablespoon of olive oil, cilantro, cumin, and garlic. Put the fish in the dish and coat. Cover and put in the fridge to marinate for 20 minutes.

While the fish is marinating, make the creamy cilantro sauce. Stir together the lime juice, cilantro, Greek yogurt, garlic, cayenne pepper, salt, and pepper in a bowl. Mix well, cover, and refrigerate until ready to serve.

Heat the other tablespoon of olive oil in a large skillet set over medium-high heat. Once it is simmering, put the fish into the skillet and cook, without touching, for 3 minutes. Then carefully flip the fish over and cook on the other side for 2 -3 more minutes, or until cooked through. Remove the fish and season with salt and pepper as desired. Let it sit for a couple minutes, then use two forks to shred the fish into bite-sized chunks.

Assemble the tacos on the tortillas with the fish, cilantro crema, and favorite toppings.

Recipe makes approximately 4 - 6 tacos.

Green Chile Chowder with Black Beans

This soup was like no other soup that I have ever  had before. I have to be honest, when I first saw the recipe, I wasn't so sure about how it would turn out, but the recipe comes from a blog that I have made many successful recipes from, so I decided to give it a try. The weather here in Maryland has been so cold for so long and this soup was just what Greg and I needed in the last week of February to warm ourselves (and our spirits) up. The soup was pretty easy to make (especially because I got Greg to chop the potatoes while I did some other prep work), and it made enough soup to eat for almost the entire week. This green chile chowder soup is comforting, filling, a bit spicy, and hearty. You only need a little bit of it to fill you up, especially if you add the toppings to it. You can choose to make the soup as smooth or chunky as you like. I pureed most of the soup but left some chunks of potato, much to the satisfaction of Greg, who prefers a chunkier soup. You can top it with sour cream, cheese, avocado, and tortilla chips. Enjoy!

Recipe for Green Chile Chowder with Black Beans

INGREDIENTS:
 4 Poblano peppers
1 Tbsp. of unsalted butter
1 small to medium yellow onion, chopped
1 - 2 jalapeno peppers, seeded and minced (I like spicy, so I threw some of the seeds in)
2 cloves of garlic, pressed
1/2 tsp. of cumin powder
3/4 tsp. of salt
Freshly ground black pepper
4 medium Russet potatoes, peeled and cut into equal-sized cubes
4 cups of chicken broth or vegetable broth*
2 cups of whole milk
1/3 cup of chopped cilantro
Juice of 1lime
2 15-ounce cans of black beans, drained and rinsed
1/4 cup of heavy cream

*Make this meal vegetarian by using the vegetable broth. 

DIRECTIONS:
Heat the oven broiler to high. Place the poblano peppers on a baking pan and place under the broiler for about 5 minutes, or until one side is blackened. Then use tongs to flip the peppers over and place back into the oven until the entire skin of the peppers are blackened. Use the tongs to remove the peppers from the pan, put into a bowl, and cover. Let them sit for about 15 to 20 minutes.

While the peppers are cooling, cut the onion and jalapenos and peel and chop the potatoes, if you haven't already. Then put the butter into a large stockpot or Dutch oven and set over medium heat. Once the butter melts, add in the onion and jalapeno and saute until softened and they start to brown, about 7 minutes. Then add in the pressed garlic, cumin powder, salt, and several grinds of black pepper. Cook for about 1 minutes, then add the potatoes to the pot and pour in the broth. Bring the mixture to a boil, then lower the heat to a simmer. Cover the pot so it is slightly cracked and cook until the potatoes are tender (about 15 minutes). Then remove from heat.

Now the roasted poblano peppers should be cool enough to handle. Peel away its skin and remove its stems and seeds. Throw away the skin, stems, and seeds. Roughly chop the roasted peppers and put into the soup. Add in the milk and cilantro to the soup, too. Then use an immersion blender to puree until the soup is almost smooth, leaving some chunks of potato if desired. Add in the lime juice, black beans, and cream.

Ladle the soup into bowls and top with your favorite toppings. I used chopped avocado, grated cheddar cheese, Greek yogurt, and lightly toasted tortilla chips.

Recipe makes approximately 8 servings.

Black Bean Hummus

Hello and Happy New Year to you! I didn't really make a list of resolutions this year, but my wish for 2015 is to get more sleep at night! Things have a been a little crazy here. I had a rocking birthday celebration a week ago...just kidding. We actually had a dishwasher fire on my birthday. A fire seriously started in a running dishwasher and luckily my husband was home to get the fire out in a matter of seconds. If we weren't home when it happened, we wouldn't have a home anymore. Very scary. I will never run appliances again when out of the house. The only damage we had was a burnt counter top, a ruined Bosch dishwasher, and smoke residue that needed to be cleaned throughout the house. It's really hard not to have a dishwasher. I'm trying to resist the urge to cook and it's getting tougher. I did make a batch of this tasty hummus yesterday and it's the perfect thing to eat for lunch or to snack on. I like it better than the traditional hummus that is made with chickpeas. It's a little spicy and a great consistency. We ate it today with toasty chips and melted cheese...yum! This black bean hummus is easy to whip up and it tastes delicious. Enjoy!


Recipe for Black Bean Hummus

INGREDIENTS:
2 cans of black beans, drained and rinsed
1 1/2 Tbsp. of Tahini (sesame seed paste)
Juice of 1 lime
2 cloves of garlic
5 Tbsp. of medium salsa (I like the Kirkland-brand organic salsa from Costco)
2 Tbsp. of canola oil or olive oil
1/2 tsp. of kosher salt
1/2 tsp. of cayenne pepper
2 tsp. of cumin powder
A couple pinches of smoked paprika
A few grinds of fresh black pepper

DIRECTIONS:
Put all ingredients into the bowl of  food processor and pulse until smooth. Put in an airtight container and refrigerate for a couple hours before serving. Serve with warm tortillas, quesadillas, tortilla chips, or veggies.

Lentil and Potato Tacos

I've missed you, tacos! For so long I have been wanting to make my sweet potato tacos or chorizo tacos, but something kept getting in the way. I'm not sure what it was...but I was prevented from making those tacos! Maybe it was because I was supposed to make these lentil and potato tacos instead. I was going through recipes for inspiration the other day because I have kind of found myself in a cooking block and I came across some good looking recipes. I found these lentil tacos with homemade taco seasoning and wanted to give them a try. I added the potatoes for some extra filling, and because I just love potatoes in tacos. I had never had lentils in tacos before, and they worked well. They are kind of crunchy and the seasoning on them was perfect. I topped my tacos with sour cream, salsa, and avocado - but you can do your fave toppings! Leave out the sour cream to make them vegan. Enjoy!

Recipe for Lentil and Potato Tacos

INGREDIENTS:
1 Tbsp. of extra virgin olive oil
1 1/2 pounds of red potatoes, cut in 1/4 - 1/2 inch cubes
1/2 cup of finely diced red onion
2 cloves of garlic, pressed
Salt and pepper
1 1/4 cup of dried lentils
2 cups water (for cooking the lentils)
1 Tbsp. of chili powder
1 1/2 tsp. of ground cumin
1/2 tsp. of paprika
1/2 tsp. of kosher salt
1/2 tsp of black pepper
1/4 tsp. of garlic powder
1/4 tsp. of dried onion flakes
1/4 tsp. of dried oregano
1/8 tsp. of crushed red pepper flakes
2 1/2 Tbsp. of ketchup (I used a black pepper ketchup - if you can find this, it has a great flavor)
10 six-inch soft flour tortillas
Sour cream (leave out to make this meal vegan)
Your favorite salsa (I used Costco's Kirkland organic medium salsa)
Chopped avocados

DIRECTIONS:
Preheat the oven to 375 degrees. Place the cubed potatoes, red onion, and garlic into a bowl and toss to coat well with the olive oil, salt, and pepper. Spread the mixture in a single layer onto a baking pan and place in the oven. Cook for 30 - 35 minutes or until potatoes are crisped but not burnt, tossing every 5 minutes or so with a spatula so the mixture doesn't stick to the pan and cooks evenly.

While the potatoes are cooking, place the water into a pot and add in some salt. Bring to a boil. Add in the lentils, stir, and then lower the heat to medium low. Cover the pot and cook for about 25 minutes or until all the water has been absorbed. Then take lentils off heat and stir in the chili powder, cumin, paprika, kosher salt, black pepper, garlic powder, dried onion flakes, dried oregano, crushed red pepper flakes, and ketchup. Mix well.

Zap the tortillas in the microwave for about 30 seconds so they are warmed and easy to fold. Assemble the tacos. Scoop the potato mixture down the middle, top with the lentils, and then add on the sour cream, salsa, and avocado. Serve with your favorite tortilla chips.

Tres Leches (Three Milk) Cake

I think that tres leches cake is seriously the best cake in the whole entire world. I recently made a tres leches cake for a neighborhood holiday party and I was shocked at how many people at the party had never heard of or tried this amazing cake.

So, what is tres leches cake? Tres leches means three milk in Spanish for those of you who are linguistically challenged (like me). A tres leches cake is sort of like an angel food cake, but once it is cooled it is pierced all over with a fork and then soaked with three different kinds of milks. But, it isn't soaked with skim milk, 1% milk and 2 % milk like I joked with my neighbor - it is soaked with sweetened condensed milk, evaporated milk, AND heavy whipping cream. Um, yum. Then you let the "milks" absorb into the cake and then after that, the cake is topped with a sweet layer of whipped cream. Who wants some tres leches cake (everyone raises their hands now - unless you are lactose intolerant).

I was introduced to tres leches cake when I was growing up because my mom would make it from time to time (but not often enough). I had never made one before though. While returning from our trip to the British Virgin Islands, we had a layover in Miami. We had dinner at this authentic Cuban restaurant and for dessert we ordered the tres leches cake. Greg had said he had never tried it before, and he fell in love with it. That inspired me to make it for the holiday party - and then since it was pretty much devoured I decided to make it again to serve for dessert with our dinner guests. My friend's 5-year old daughter was saying goodbye to us and she said "thank you again for the yummiest most deliciousest cake in the whole entire world." Adorable. I made the tres leches cake today to have for dessert after dinner tonight at my parents' house - I am also making baked chicken taquitos and corn pudding for my birthday dinner! I think you will also love this cake as much as me and everyone else. Enjoy!

Recipe for Tres Leches (Three Milk) Cake

INGREDIENTS:
For the cake
1 cup of all-purpose flour
1 1/2 tsp. of baking powder
1/4 tsp. of salt
5 eggs (they will be separated into yolks and whites)
1 cup of granulated sugar (divided - you will use 3/4 cup with the yolks and then 1/4 cup for the whites)
1/3 cup of 2% milk or whole milk
1 1/4 tsp. of pure vanilla extract

For the three milks
1/3 cup of heavy whipping cream
1 12.5 ounce can of evaporated milk
1 14 ounce can of sweetened condensed milk

For the whipped cream topping
1 2/3 cup of heavy whipping cream
1/4 cup of granulated sugar
1/8 tsp. of almond extract (optional)

Maraschino cherries, strawberries, or raspberries for topping each piece

DIRECTIONS:
For the cake:
Butter a 9 x 13 inch cake pan with unsalted butter or spray it with cooking oil. Preheat the oven to 350 degrees. Put the flour, baking powder and salt into  largish bowl and mix to incorporate.

Separate the egg yolks and egg whites into two separate medium-sized bowls. Add 3/4 cup of sugar to the egg yolks and mix with an electric hand mixer set on high speed for about 45 - 55 seconds, or until the yolks are pale yellow in color. Add in the milk and the vanilla extract and stir well. Pour the egg yolk mixture into the dry ingredients and stir gently until it is well combined.

Use the electric hand mixer set on high speed to beat the egg whites until soft peaks form (about 35 - 45 seconds). Continue beating the whites on high speed and pour in the 1/4 cup of sugar and beat until the egg whites are stiff (about 1 1/2 - 2 minutes). Add the egg white mixture to the batter and fold in very gently until it is just combined. Pour the batter into the cake pan and spread evenly.

Bake for about 35 - 40 minutes or until you prick it with a toothpick or fork and it comes out clean.

Place cake pan on a cooling rack and allow it to cool completely.

Once cooled, pierce the surface of the cake ALL over with a fork, making sure you don't poke all the way through the cake.

For the three milk mixture
Combine the condensed milk, heavy whipping cram, and evaporated milk into a 4-cup liquid measuring cup and stir until smooth. Pour the mixture all over the cake, making sure to get a lot around the edges of the cake too.

Cover the cake and place in the fridge to allow it to absorb the milk mixture. I think it's best to allow it to absorb for at least 2 hours before adding on the whipped topping and serving.

Before serving, make the whipped topping.

For the whipped topping
Before making the whipped topping, place a metal bowl and the attachment for the electric hand mixer into the freezer to chill for about 15 minutes. Then put the heavy whipping cream, sugar, and almond extract into the chilled metal bowl. Use the chilled beater on the electric hand mixer set on high speed and beat until the cream turns thick, about 1 1/2  to 2 minutes. Use a spoon or spatula to evenly top the cake. Put cake back into the fridge until ready to serve. Then cut into squares and top each piece with a maraschino cherry, strawberry, or raspberry (or whatever else you desire). Enjoy!

Store cake covered in the fridge for up to 5 days.

Makes approximately 16 - 20 servings, depending on how big you make the slices!

Mexican Salad with Cilantro-Lime Vinaigrette


I have been wanting to post this salad recipe for a long time now, but the weather always just seemed too cold for a sunny-looking salad like this one! Well, I can't hold off anymore - just like I couldn't hold back from wearing open-toed heels today, even though the high barely reached 50 degrees. Where are you, Spring? You can stop hiding and come out now! Okay, back to the salad. This salad is like one I had at Nordstrom Cafe years ago. I posted the recipe several weeks ago for the cilantro-lime vinaigrette that tasted similar to the dressing on the Nordstrom salad. This salad is super easy to make and it makes a great light meal or side. If you want to spice it up a little, you can toss in 1/2 Tbsp. of chipotle ranch dressing. It doesn't need it, but it adds a nice kick.

Cilantro-Lime Vinaigrette
for Mexican Salad
You'll love the combination of corn, tomatoes, avocado, queso fresco, and  toasted pumpkin seeds in this Mexican Salad. I think it would work well stuffed in a tortilla for a tasty lunch wrap. If you are craving meat, top it with some shredded chicken. Enjoy!

Recipe for Mexican Salad with Cilantro Lime Vinaigrette

INGREDIENTS:
4 cups of chopped romaine or iceberg lettuce
1/3 cup of frozen corn kernels, thawed
1 Avocado, peeled, pitted, & sliced
20 - 25 cherry or grape tomatoes, cut in half
4 Tbsp. of crumbled Queso Fresco cheese (Mexican cheese)
3 Tbsp. of raw pumpkin seeds, lightly salted and toasted
1/4 cup of cilantro-lime vinaigrette
1 Tbsp. of chipotle ranch dressing (optional)
Freshly ground black pepper

DIRECTIONS:
Divide lettuce onto two plates. Top the lettuce with the corn, sliced avocado, cherry or grape tomato halves, crumbled queso fresco cheese, and lightly salted and toasted pumpkin seeds. Top each salad with 1 1/2 Tbsp. of cilantro-lime vinaigrette, and 1/2 Tbsp. of chipotle ranch dressing, if using. Sprinkle on a little freshly ground black pepper, if desired. Serve & enjoy.

Super Salsa for the Super Bowl!


Happy Super Bowl weekend to everyone! Today I'm sharing a recipe for a salsa that will be great to make for a Super Bowl party (or any other kind of party). I first posted this recipe back in June, but I think it is worth a repost. A friend of mine mentioned yesterday on my Facebook page that she made the salsa, and it made me think about sharing the recipe again. This salsa is not for those of you who can't handle a little heat - it has a lot of KICK to it. For those of you can handle the heat,  tomorrow you can sit back and kick it with chips, super salsa, and the Super Bowl. But don't stay up too late tomorrow night because I checked the calendar, and Super Bowl Monday is NOT a day off from work. Darn!

Recipe for Super Salsa

INGREDIENTS:
2 jalapenos, deveined & seeded and coarsely chopped (take out more seeds for less heat, less for more heat)
3 cloves of garlic, cut in half
1 14-ounce can of diced tomatoes, drained
1/2 of a smallish yellow onion
2 Tbsp. of red wine vinegar
3 large tomatoes
1 Tbsp. of cumin powder
1/4 tsp. of cayenne pepper
1/4 tsp. of kosher salt
1 - 2 Tbsp. of cilantro leaves
Juice of one lime

DIRECTIONS:
Add the jalapeno and garlic to the bowl of a food processor. Pulse until finely chopped. Add all of the other ingredients to the food processor and pulse until the salsa is at your desired chunkiness. Put salsa in a bowl and cover. Put it in the fridge for a couple hours before serving so the flavors can marinate together. Enjoy!
